One of my favourite meals EVER! It's easy to make and tastes fantastic.
It's 100% vegan and can be made gluten free too.
For this recipe, I didn't make bechamel sauce from scratch like I usually do. Instead, I used a pre-made "just add water" bechamel sauce mix which I purchased from my local health food store. The brand is "Gluten-Free Food Co".
This recipe makes 8 generous serves.
Ingredients:
1 white onion, diced
1 small broccoli, chopped fine
1 capsicum, diced
3 cups of mushrooms, diced
1 zucchini, grated
1 can lentils
1 can crushed tomatoes
500ml pasta sauce
Onion powder
Garlic powder
Lasagne sheets
1 packet of Gluten-Free Food Co bechamel sauce mix
Grated vegan cheese (I used bio cheese. It melts really well)
Method:
Preheat oven 220c (428F)
Chop/grate all the vegetables then add to fry pan with onion and garlic powder, medium heat
Once veg has softened, add lentils, crushed tomatoes and pasta sauce to fry pan. Stir occasionally
Prepare bechamel sauce in seperate pot (directions on packet)
Assemble lasagne. Veg mix first followed by lasagne sheets and repeat. The top layer is lasagne sheet, bechamel sauce then vegan cheese
Cook for 45 minutes or until sheets have softened
Serve!
It's that easy. Waiting for it to cook is the hardest part, but it's so worth the wait.
