Vegan Apple Crumble (GF)

Super easy and healthy apple crumble! 100% vegan and can be made gluten-free.


I adapted this recipe for a few I saw online, and it turned out perfectly.


I love recipes that have little ingredients and don't make a huge mess! I only used measuring cups, one saucepan, my blender and a baking dish for this :)


Ingredients:

  • 7 apples, chopped (I used pink lady)

  • 1 cup water

  • ½ cup coconut sugar

  • 1 tsp cinnamon

  • 1 cup almonds

  • ¾ cup gluten-free oats (I used quick oats)

  • ⅓ cup coconut oil, melted or softened

Method:

  1. Preheat oven to 180C (350F)

  2. In a saucepan, combine apples, water, half of the coconut sugar and half of the cinnamon. Cook for 10-15 minutes until soft. Stir, so it doesn't stick

  3. For crumble topping: Combine almonds, oats, coconut oil and the remaining coconut sugar and cinnamon in the blender or food processor. Blend until fine texture (I left some chunky bits for extra crunch)

  4. Place softened apple mixture in a 20cm wide baking dish

  5. Top with oat crumble mixture

  6. Bake in the oven for 25-30 minutes or until it starts to brown on top


I served it with vegan ice cream! Pana mint choc chip ice cream. My husband and I managed to polish it off in one day 😊
